Title: Hot Fudge Pudding Cake > Butter Busters Cookbook

1cSelf-rising flour
1/4cSugar and
3 Packets Sweet'N Low
2tbCocoa
1/2cSkim milk
2tbLiquid Butter Buds
1cGrape Nuts Cereal
1/2cBrown sugar and
2tsSweet'N Low Brown
1/4cCocoa
1 3/4cHot water

Heat oven to 400 F. Measure flour, granulated sugar, and 2 Tbs. cocoa in a large bowl. Blend in milk and Butter Buds or Fleishmann's fat-free spread; stir in Grape Nuts Cereal. Spread mixture in the bottom of a 9-inch square glass dish sprayed with Pam Spray. Stir together brown sugar and 1/4 cup cocoa; sprinkle over batter. Pour hot water over mixture. Bake 40-45 minutes. While hot, cut into squares; invert onto dessert plate and spoon sauce over each serving. If desired top with Guilt Free (sugar and fat free vanilla ice cream or fat-free Cool Whip or other fat-free whipped topping. This is a sure-to-please-everyone dessert. The cake and sauce bake in the same pan. When the cake bakes it goes to the top and the sauce goes to the bottom. Kids love to make this cake because it's kind of like a science experiment.

I always use Sweet'N Low in baking because it doesn't change the texture. You CAN NOT use Nutra Sweet (Equal) to bake with because it contains asparatame and the sweetness breaks down at 85 degrees. Many people do not realize that Sweet'N Low has a brown sugar variety that bakes great! It's called Sweet'N Low Brown.

There are other substitutions in place of sugar if you can't use sugar at all. Some of them are apple butter, brown rice syrup,unsweetened fruit juice concentrates (make sure they don't contain sugar or corn syrup- Minute Maid seems to work best), fruit source, fruit spreads and preserves, honey, date sugar, Sucanat, Molasses and dried fuits. Try using flavorings and spices like vanilla extract, nutmeg, and cinnamon for added sweetness. Mildly sweet flours like oat and barley can be used to reduce the need of sugar in baking. Este has a whole line of sugar-free products in most grocery stores (including cookies, candy, dressings, sauces, whipped toppings, puddings, etc.)

Note: When cooking or baking with fruit concentrates, always combine the ingredients well, then stir in the baking soda and baking powder quickly and mix (28-30 beats so ingredients are mixed well), and immediately put the product into the pan and the pan into the oven. If the baking powder or soda is allowed to sit in the fruit mixture, the product won't rise properly.
